Allow it to colonize with Lactobacillus and yeasts and other microbes for 36 - 48 hours
How we can do that ?
This is 3 step after we have pour rice wash water into a bowl .

Does it mean that we can throw rise away ?

The rice wash collects microbes while its sitting out in teh shade as it says. No you dont throw the rinse away you use it for mixing with the milk at a 4:1 milk to rice wash ratio.
